We could always have a few types of Swallows and Amazons types of activities such as creating a walk the plank from an island into the lake or even into a pool!!

Yeah, I threatened to make my younger brother walk the plank, but I still need to set up a plank for him to walk. He needs to walk the plank about five times now.  I started to set up a wading pool yesterday in my yard, but it's only three feet deep, and it says right on NO DIVING. I jump in anyways though. I wish I lived nearer to all the TARS meetings (I live 12+ hour plane flight away-grr), because then I could really help. There could fishing game. Hang a blanket over a clothesline and get fishing poles (or just a stock with string), and toss it over the line. Then have somebody behind it to attach prizes, like those gummy fish candies.
